You can check the number and type of pirates you have at Pub.

■ How to check number of pirates per type

- [Main screen] > [My Territory] > [Tap on Pub] > [Hire Pirates] > [Choose pirate type]

But this will not show you the pirates that have been already assigned to ships. 

You can tap on [Bosun] in Common Area to check the number and types of assigned pirates.
